Easy Rocky Road

Rocky road is one of the easiest no-bake slices to make! This version has rich dark chocolate, mini marshmallows, glace cherries and pistachio nuts and is a family favourite treat for any time of year.

Ingredients

  • 2 x 170-180 gram blocks dark chocolate
  • ¼ cup desiccated coconut
  • cup pistachios
  • ½ cup glace cherries
  • 1 cup mini marshmallows

Instructions

  • Line a 20cm square baking pan with baking paper and set aside.
  • In a large microwave safe bowl, break up the chocolate into small pieces. Place the bowl in the microwave for 20-30 second bursts, stirring thoroughly between each with a metal spoon until the chocolate has melted and is smooth.
  • Add the mix-ins to the melted chocolate and stir to combine. Pour the mixture into the prepared pan and smooth down with the back of the spoon so that it’s evenly distributed in the pan. Place in the fridge for at least 3 hours until the chocolate has set. Remove from the pan and slice into squares with a serrated knife. Store in the fridge in an airtight container.

Notes

This recipe can be dairy-free if you use high quality dark chocolate. Otherwise, just use your favourite brand.
