Ingredients

  • 1 tablespoon simple syrup see notes
  • 1 tablespoon fresh lime juice
  • Small handful fresh mint leaves
  • Tonic water
  • Slice of fresh lime

Instructions

  • Add the simple syrup, lime juice and fresh mint leaves to a highball glass. Muddle the leaves with the juice and syrup using a cocktail muddler or the end of a rolling pin.
  • Fill the glass with ice, add a slice of lime and top with tonic water.
  • Use a long handled spoon to mix the drink and garnish with fresh mint.

Notes

Simple syrup: I make my own simple syrup by combining 1 cup of white sugar and 1 cup of water in a small saucepan over medium heat. Allow the sugar to dissolve and then bring the mixture to a boil before turning off and letting the syrup cool completely before using. This simple syrup will store in the fridge for a couple of weeks in a bottle or jar.
