Rice Cooker Mexican Rice

This rice cooker Mexican rice is the simplest way to make this delicious and flavourful side dish. With basically no prep work and just 5 ingredients, you simply let your rice cooker do the cooking. The result is the easiest vegetarian accompaniment to your Mexican-inspired weeknight dinner.

Ingredients

  • 1 cup white rice
  • 2 cups vegetable stock
  • cup salsa
  • 1 tablespoon taco seasoning
  • 1 teaspoon olive oil

Instructions

  • Rinse the rice thoroughly until the water runs clear. Add the rice with the rest of the ingredients to the rice cooker and mix to combine. Turn the rice cooker onto cook.
  • Once the rice cooker is finished, mix well to combine everything. Serve with lime and coriander (cilantro) if desired.

Notes

Serving size: this amount of rice will serve 6 people if intended just as a side dish. As a main, it will serve 3-4. 
Taco seasoning: you can make your own taco seasoning by combining ½ tablespoon chilli powder, ½ tablespoon ground cumin, 1 teaspoon paprika,1 teaspoon sea salt, ½ teaspoon garlic powder, ½ teaspoon onion powder, ¼ teaspoon dried oregano, ¼ teaspoon black pepper. Mix it up and measure out 1 tablespoon for this recipe.
Cooking time: how long the rice takes to cook will depend on your individual rice cooker.
