Smashed Avocado on Toast

An Aussie café classic - learn how to make the BEST smashed avocado on toast! I am sharing all my tips to construct the ultimate brunch dish that is not only easy and tastes amazing, but will rival the quality of your favourite café, all without the expensive price tag. Ingredients

  • 4 thick slices sourdough bread
  • 1 tablespoon olive oil
  • 2-3 ripe avocados
  • 1 lemon
  • Salt and pepper to taste
  • 40 grams feta crumbled
  • Everything bagel seasoning to sprinkle
  • Pea sprouts for garnish

Instructions

  • Drizzle the olive oil over the sliced bread and place on a tray under the grill to toast until golden brown. Turn the slices over so that both sides are toasted and golden.
  • Peel the avocados and roughly chop them into chunks. Add the avocado into a bowl and gently mash with a fork until chunky. Season with salt and pepper and a generous squeeze of fresh lemon juice. Mix to combine, taste and adjust seasoning as necessary.
  • Pile the avocado mixture over the toasted bread. Sprinkle over the crumbled feta followed by the everything bagel seasoning. Finally finish with a little of the pea sprouts for garnish and serve immediately with extra lemon wedges.
