Chicken Salad Sandwich

An easy chicken salad made using store bought rotisserie chicken makes the ultimate chicken salad sandwiches perfect for lunches, picnics or any gatherings. A classic chicken sandwich is always a favourite, and this one is creamy, crunchy and just super delicious - everyone will love them!

Ingredients

  • ½ rotisserie chicken
  • ½ cup whole egg mayonnaise
  • ½ cup light sour cream lactose free
  • cup walnuts chopped
  • 2 stalks celery finely chopped
  • ¼ cup chopped fresh parsley
  • Salt and pepper to taste
  • 10 slices white sandwich bread

Instructions

  • Pull the meat off your chicken and finely chop before adding to a large mixing bowl.
  • Add the mayonnaise, sour cream, walnuts, celery and parsley to the chicken and mix well until combined. Season with salt and pepper to taste.
  • Divide the mixture between 5 slices of white bread and top with the remaining bread. Cut in halves or quarters and place on a plate to serve.

Notes

I didn’t butter my bread as I find the chicken mixture is enough, however this is personal preference and if you like the taste you can butter your bread first.
You can optionally add sprouts or any other greens to your sandwiches before serving.
Finger sandwiches - to make finger sandwiches instead, when cutting your sandwiches, first remove all crusts and then cut into smaller, rectangular pieces and place on a platter.
These sandwiches are great to make ahead of time and the filling alone or the made sandwiches can be stored covered in the fridge until ready to serve for up to 3 days.
Dairy-free option: As written this recipe is lactose-free as we're using the lactose free sour cream however you can substitute with dairy free sour cream instead or use more mayonnaise. 
Gluten-Free option: Unfortunately store bough rotisserie chicken is NOT gluten-free. Therefore to make a gluten free version of these sandwiches, you'll need to roast your own chicken to ensure it safe and use gluten-free sandwich bread.
