Preheat your air fryer to 200°C/400°F.
Place the 2 large chicken breasts on a cutting board and slice each in half horizontally to create four thinner fillets.
To ensure even thickness, use a meat mallet, or cover the base of a saucepan with plastic wrap and gently pound the fillets until even.
Set up a crumbing station using three shallow bowls. In the first, combine the 50 grams plain flour/all purpose flour with the ¼ teaspoon paprika, ½ teaspoon garlic powder, ¼ teaspoon cracked black pepper and ¼ teaspoon salt. In the second, whisk the 2 eggs. In the third, combine the 100 grams panko breadcrumbs with the 1 teaspoon garlic powder, 1 teaspoon dried parsley, salt and pepper.
Dip each fillet first into the flour mixture, making sure it is well coated. Next, dip it into the egg, ensuring full coverage. Finally, coat the fillet in the breadcrumb mixture, making sure all sides are covered.
Lightly spray the air fryer basket with cooking oil. Place the crumbed fillets in the basket, then spray a little cooking oil over the top to help the crumbs brown.
Cook for 12–15 minutes, turning once about three-quarters of the way through, so both sides become golden and crispy. Cook until the chicken is cooked through and reaches an internal temperature of 74°C/165°F. Depending on the size of your air fryer, you may need to cook in batches until all four schnitzels are done.
Once cooked, serve the chicken schnitzels immediately.
