These air fryer lamb chops are an easy and flavourful addition to any meal, made in just 10 minutes! They are marinated with lots of garlic and fresh thyme for a simple and delicious weeknight dinner.
Trim any excess fat from the lamb chops if needed and place them in a large bowl.
Add the olive oil, crushed garlic, and chopped thyme (or rosemary). Season generously with salt and pepper, then mix well to coat the lamb chops evenly.
Cover and refrigerate for at least 1 hour, or up to overnight, to marinate.
When ready to cook, preheat the air fryer to 200°C (400°F).
Arrange the lamb chops in a single layer in the air fryer basket. Cook for 7-8 minutes, flipping halfway through.
The lamb chops are medium when the internal temperature reaches 63°C (145°F). For medium-rare, aim for 57°C (135°F), and for well-done, 71°C (160°F).
Remove from the air fryer and let them rest for 5 minutes before serving.
