Ingredients

  • ½ cup soy sauce
  • cup honey
  • 2 cloves garlic crushed
  • 1 tablespoon rice wine vinegar
  • 1.5 kilograms chicken drumsticks approx. 8-10 drumsticks
  • ½ teaspoon white pepper
  • Sesame seeds and sliced spring onions optional to serve

Instructions

  • Preheat the oven to 180°C / 350°F. In a jar or small bowl, combine the soy sauce, honey, crushed garlic, and rice wine vinegar. Shake or stir well until everything is fully mixed.
  • Place the chicken drumsticks in an oven-safe baking dish. Pour the marinade over the chicken, ensuring all pieces are well coated by turning them in the sauce.
  • Place the dish in the oven and bake the drumsticks for 1 hour, turning them once halfway through cooking. The chicken is done when it reaches an internal temperature of 74°C / 165°F.
  • Once the chicken is cooked through, you can switch the oven to grill / broil for an extra 5-10 minutes, turning the chicken occasionally to get the skin extra brown and crispy.
  • To serve, drizzle the sauce from the baking dish over the drumsticks and sprinkle with sesame seeds and sliced spring onions.

Notes

Cooking Time: depending on the size of your chicken drumsticks, they may be cooked through at the 45 minute mark, to an hour. For the most accurate measure, use a thermometer and when the internal temperature reaches 165°F / 74°C the chicken is cooked. At this stage, I like to turn the oven onto the grill setting and cook for another 10 minutes, turning the chicken occasionally, to crisp and brown the skin a little more but this step is completely optional.
Serving Suggestion: You can serve the chicken however you like, but personally I love to add it to a bowl with some rice and steamed pak choy as pictured in this post, with a generous amount of the sauce from the baking dish over the top.
