This sweet and refreshing non alcoholic cherry spritz is the perfect summer mocktail. Made with the most delicious homemade sweet cherry syrup, combined with lemon juice and tonic water, this is the drink you’ll want to sip on this festive season so you don’t feel like you’re missing out.
Make the cherry syrup. Cut the cherries in half and remove the stems and pits and place them into a small saucepan. Add in the sugar, water and extracts and place on the stove over a medium/low heat until the sugar dissolves. Allow the syrup to simmer for 10 minutes or until the cherries have softened and the syrup is a rich, purply red colour.
Remove from the heat and strain the syrup, discarding the cherries. Pour the syrup into a glass bottle or jar and store in the fridge until you’re ready to use it.
To make the cherry spritz, fill a glass with ice. Add the cherry syrup and lemon juice and top with tonic water or soda water. Mix using a long handled spoon and garnish with fresh mint and a slice of lemon.

You can adjust the quantities / ratios of the lemon juice and cherry syrup depending on how sweet or tart you want the drink to be.Cherry syrup: This recipe makes about 200ml of syrup which is enough for approx 8-10 drinks. You can store the leftover cherry syrup in a bottle or jar in the fridge for up to 2 weeks.
