Get out of that dinner rut with this one pan dumpling bake! Frozen dumplings are baked in a rich red curry coconut sauce, creating a comforting meal that’s ready in one dish. Serve with spring onions, chilli crunch oil, and rice for a deliciously easy meal that’s perfect any night of the week.
In a lidded casserole dish, mix together the 1 400 ml coconut milk, 2 cloves garlic, 1 teaspoon crushed ginger, 2-3 tablespoons red curry paste, 1 tablespoon soy sauce, 2 teaspoons fish sauce, and Juice of 1 lime until well combined.
Add the 1 bunch bok choy and gently stir to coat it in the sauce.
Arrange the 20 frozen dumplings in the dish, ensuring they are mostly submerged in the sauce.
Cover with the lid and bake for 20 minutes. Remove the lid and continue baking for another 10 minutes, until the dumplings are tender and lightly golden on top.
Finish with a sprinkle of Sliced spring onions and a drizzle of Chill crunch oil before serving.
