Ingredients

  • 1 French baguette sliced into 1 cm rounds
  • 1 tablespoon olive oil
  • 3-4 tablespoons basil pesto
  • 1 wheel dairy free camembert sliced into wedges
  • 100 grams prosciutto thinly sliced
  • Fresh basil leaves
  • Balsamic glaze

Instructions

  • Preheat your oven grill (broiler) to medium-high. Arrange the baguette slices on a baking tray, then brush each side lightly with the olive oil.
  • Place under the grill for 1–2 minutes per side, or until the bread is golden and crisp.
  • Assemble the crostini. Spread some of the basil pesto over the crostini then place a wedge of the dairy free camembert. Top with some of the prosciutto, a couple of basil leaves and then a drizzle of balsamic glaze. Repeat with all of the crostini and serve immediately.

Notes

Crostini:  you can toast the bread slices up to 24 hours in advance. Once cooled, store them in an airtight container. Assemble the crostini with toppings just before serving for the best results.
