These sausage and egg smash tacos are the most delicious and easy savoury breakfast. Made with beef sausages, soft scrambled eggs and a quick smashed avocado, these breakfast tacos are the perfect way to start the morning.
Prepare the smashed avocado: In a small bowl, combine the avocado, garlic powder, lemon juice, salt, and pepper. Mash together with a fork until well combined. Taste and adjust the seasoning as needed. Set aside.
Cut the sausages in half and remove the casing. Using your hands, press each half of the sausage onto one of the tacos until the meat forms a thin, even layer. Repeat with the remaining sausage halves and tacos.
Heat a frying pan over medium-high heat and lightly spray with cooking oil. Cook the tacos, meat side down, for 3-4 minutes until browned and cooked through. Flip the taco and cook for another 30-60 seconds. Repeat until all the tacos are cooked.
In a small bowl, beat the eggs until frothy and well combined. Wipe out the frying pan with kitchen paper, turn the heat to low, and add a little more cooking oil. Pour in the egg mixture and gently stir with a rubber spatula until just set.
