Savoury Mince

This easy savoury mince recipe is an absolute classic Australian dish that is perfect for weeknight cooking. This simple mince recipe is so easy to make, and tastes even better reheated! It’s also really versatile, being served over toast, mashed potato, rice or wrapped in puff pastry for an easy pie or pastie.

Ingredients

  • 1 tablespoon olive oil
  • 1 brown onion/yellow onion finely diced
  • 2 cloves garlic crushed
  • 2 tablespoons tomato paste
  • ½ teaspoon curry powder
  • 500 grams beef mince/ground beef
  • 2 tablespoons worcestershire sauce
  • 375 ml beef stock
  • 1 ½ cups frozen vegetables peas, carrot, corn
  • 2 teaspoons cornflour/cornstarch
  • Salt and pepper to taste

Instructions

  • Heat a large saucepan or pot with tall sides over medium heat. Add 1 tablespoon olive oil, then add the 1 brown onion/yellow onion. Cook for about 2–3 minutes, stirring with a wooden spoon, until the onion turns translucent.
  • Stir in the 2 cloves garlic and cook for another 30 seconds, until fragrant.
  • Add the 2 tablespoons tomato paste and ½ teaspoon curry powder and cook for a minute or two, until the tomato paste darkens slightly and the curry powder becomes fragrant. If it starts to get too dark, turn down the heat and add a splash of beef stock to deglaze the bottom of the pan.
  • Add the 500 grams beef mince/ground beef. Break it apart with a spoon or spatula and cook until browned.
  • Add the 2 tablespoons worcestershire sauce, 375 ml beef stock and 1 ½ cups frozen vegetables. Stir well and bring to a simmer. Reduce the heat to low and simmer for about 10 minutes to develop the flavours.
  • In a small bowl, mix the 2 teaspoons cornflour/cornstarch with a little water to make a smooth paste. Stir this into the mince and simmer for a few more minutes, until the sauce thickens into a gravy.
  • Season with Salt and pepper to taste to taste and serve.

Notes

Gluten free option: use a gluten free Worcestershire sauce and beef stock.

Storage instructions: tastes even better reheated. Keeps in the fridge for up to 3 days and freezes well for up to 3 months.
