Sparkling Watermelon Lime Mocktail

This easy sparkling watermelon lime mocktail is the perfect refreshing drink for summer. Made with fresh watermelon, lime juice and topped with soda water and mint, this is the drink you’ll want to sip on if you’re sober, driving, or just need a break from the booze.

  • 4 cups cubed fresh watermelon
  • cup fresh lime juice approximately 3–4 limes
  • 4 sprigs fresh mint
  • Soda water
  • Extra lime slices for garnish

Instructions

  • Cut the watermelon into cubes, discarding the rind and any white parts. Add the watermelon cubes and lime juice to a blender and blend until smooth, using a tamper if necessary. If your blender is small, work in batches to blend all the watermelon.
  • Pour the blended mixture through a fine-mesh strainer to remove any pulp, then transfer the strained juice to a jug.
  • Fill glasses or a large pitcher with crushed ice. Pour the watermelon lime juice into each glass or pitcher until it’s halfway full. Top with soda water to fill the remaining space. Garnish each glass with a sprig of fresh mint and a lime slice, then serve immediately.

Notes

Don’t have crushed ice? Place ice cubes in a zip-lock bag and crush them with a rolling pin.
Adjust the amount of lime juice to suit your taste - add more for extra tang or reduce slightly for a sweeter taste.
