These black cocoa sugar cookies are soft and chewy and have a rich, chocolatey flavour similar to an Oreo, plus they are naturally coloured using black cocoa powder. These are a super simple dairy free cookie recipe and can be made in under 30 minutes with no chilling of the dough required!
Preheat the oven to 180°C/350°F and line two large baking trays with baking paper.
In a large mixing bowl (or the bowl of a stand mixer), beat the 125 grams dairy free butter and s220 grams white sugar/granulated sugar well with an electric mixer. Add the 1 large egg and 2 teaspoons vanilla extract and beat well to combine.
Add the 185 grams plain flour/all purpose flour, 50 grams black cocoa powder, ½ teaspoon baking powder and ½ teaspoon bicarbonate of soda/baking soda, and beat well until a dough forms.
Scoop tablespoon-sized balls of dough and roll into balls. Roll each ball in the extra ¼ - ½ cup white sugar/granulated sugar until coated, then place onto the prepared trays, leaving enough space for them to spread.
Bake for 10–12 minutes. Take the cookies out and bang the tray on the counter a couple of times to deflate them. Allow them to firm up on the tray for a few minutes before transferring to a wire rack.
Once completely cool, store any leftover cookies in an airtight container for up to 5 days.
Notes
Gluten free option: use a gluten free plain flour blend in place of the plain flour.Black cocoa powder: This is what gives these cookies their deep colour and Oreo-like flavour. If you can't find it, you can use regular Dutch-processed cocoa, but the cookies won't be as dark.Storage instructions: store in an airtight container for up to 5 days.
