Lemon Spritz Mocktail

This lemon spritz mocktail is my favourite drink to sip on this summer! It comes together with just three simple ingredients and has the perfect mix of sweetness and bright citrusy tang. I love how light and refreshing it is, making it ideal for warm afternoons when you just want something cold and bubbly to drink without the alcohol.

Ingredients

  • ΒΌ cup freshly squeezed lemon juice
  • 2-3 tablespoons simple syrup adjusted to taste
  • Ice
  • Soda water
  • Sprig of fresh mint to garnish
  • Lemon slices to garnish

Instructions

  • Add the lemon juice and simple syrup to a glass and stir well to combine.
  • Fill the glass with ice and top with soda water.
  • Give it another gentle stir, then garnish with fresh lemon slices and a sprig of mint.
  • Enjoy immediately!

Notes

Homemade Simple Syrup: In a small saucepan, combine 1 cup of water and 1 cup of white sugar. Place over medium heat and stir until the sugar is fully dissolved. Once dissolved, remove it from heat and let it cool completely. From here you can use it in cocktails and mocktails or transfer it to a clean jar or bottle and store in the fridge for up to one month.
