Lemon Spritz Mocktail

This lemon spritz mocktail is my favourite drink to sip on this summer! It comes together with just three simple ingredients and has the perfect mix of sweetness and bright citrusy tang. I love how light and refreshing it is, making it ideal for warm afternoons when you just want something cold and bubbly to drink without the alcohol.

If you know me in real life, then you’ll know just how much I love a spritz cocktail especially in the summer. While I will never pass up a classic Aperol Spritz, in more recent years I have found delight in the sweet and tangy Limoncello Spritz.

But sometimes, it’s not an alcohol day. Whether I am driving, enjoying a sober month, or just want something refreshing, it’s always a great option to have a delicious and simple mocktail to turn to.

This lemon spritz is exactly that. It only uses a few ingredients so it’s not difficult to make and you can customise the sweet to tangy ratio to suit your taste and current mood.

Honestly it’s just the perfect summer drink to sip on!

Key Ingredients

I find with mocktails I want them to be very simple and easy to prepare, which is exactly what this lemon spritz is containing just three key ingredients.

  • Lemon juice – fresh is always best so if you can, squeeze your own. If you’re planning to make a few of these though it can be more budget-friendly to just buy the pouches of lemon juice from the supermarket.
  • Simple syrup – you can use a store bought one otherwise it’s very easy and cheap to make your own at home so I’ve included the instructions below.
  • Soda water – club soda, sparkling water, whatever you call it a little carbonated water makes this a bubbly spritz.
  • Garnish – what is a fun drink without the garnish! A few lemon slices and a sprig of fresh mint keep this mocktail super fresh and delicious.

Variations

  • Rosemary Lemon Spritz – when making your simple syrup, throw in a spring of rosemary to allow it to infuse into the syrup. Use this to make your spritz and then garnish with an extra rosemary sprig.
  • Make it boozy – if you want to turn this into a cocktail, add in a shot of vodka.

Step-By-Step Instructions

You don’t need any special equipment like a cocktail shaker to make this drink, just your chosen glass and a spoon.

If you are making your simple syrup (which I recommend as it’s so easy), you’ll need to do this ahead of time to give it time to cool before using.

How to make simple syrup

Simple syrup is an essential ingredient when it comes to making drinks at home, but luckily as the name suggests, it’s super simple to make yourself with a standard 1-1 ratio of sugar to water.

In a small saucepan, combine 1 cup of water and 1 cup of white sugar. Place over medium heat and stir until the sugar is fully dissolved. Once dissolved, remove it from heat and let it cool completely. From here you can use it in cocktails and mocktails or transfer it to a clean jar or bottle and store in the fridge for up to one month.

To make your lemon spritz, add the lemon juice and simple syrup to a glass and give it a good mix with a spoon to combine.

Add ice then top with soda water. Give it another mix before garnishing with fresh lemon slices and fresh mint. Enjoy!

Recipe FAQs

What can I use instead of simple syrup?

If you don’t have simple syrup, you can use maple syrup, agave nectar, or shake the lemon juice with a little sugar to dissolve it.

Can I make this drink ahead of time?

It’s recommended to make and serve this fresh to maintain the bubbles. You can prep the simple syrup and lemon juice ahead of time however.

Ingredients

  • ¼ cup freshly squeezed lemon juice
  • 2-3 tablespoons simple syrup adjusted to taste
  • Ice
  • Soda water
  • Sprig of fresh mint to garnish
  • Lemon slices to garnish

Instructions

  • Add the lemon juice and simple syrup to a glass and stir well to combine.
  • Fill the glass with ice and top with soda water.
  • Give it another gentle stir, then garnish with fresh lemon slices and a sprig of mint.
  • Enjoy immediately!
