Ingredients

  • 250 grams dairy free plain sweet biscuits such as digestives or Arnott's Marie biscuits
  • 90 grams desiccated coconut
  • 25 grams cocoa powder
  • 320 gram can sweetened condensed coconut milk or homemade dairy free condensed milk
  • 60 ml rum
  • ½ cup desiccated coconut extra for rolling

Instructions

  • Crush the 250 grams dairy free plain sweet biscuits into a fine crumb using a food processor, or in a zip lock bag with a rolling pin.
  • Add the crumbs to a large mixing bowl with the 90 grams desiccated coconut and 25 grams cocoa powder and stir to combine.
  • Add the 320 gram can sweetened condensed coconut milk and 60 ml rum and mix until thick, sticky and well combined.
  • Refrigerate the mixture for 30 minutes to make it easier to roll.
  • Roll level tablespoons of mixture into balls, then roll in the extra ½ cup desiccated coconut to coat.
  • Place on a plate or tray in a single layer and refrigerate for another 30 minutes to firm up, then transfer to an airtight container and keep in the fridge.

Notes

Biscuits: Traditionally, rum balls use milk arrowroot however as these contain milk products I used digestives instead. While Arnott's Marie Biscuits used to contain milk, they now just carry a 'may contain' warning making them a good option as well. However, any plain sweet biscuit (or cookie if you’re in the US) will work here.
No food processor? You can crush the biscuits by placing them in a large ziplock bag and carefully banging the biscuits with a rolling pin, moving them around inside the bag, until they resemble a fine crumb.
Rum: I used a dark, spiced rum for these which gives a delicious and rich flavour but any dark rum will work.
Alcohol free option: leave out the rum and add 1 teaspoon vanilla extract. The mixture will be drier, so skip the first chill and roll straight away.
Gluten free option: use gluten free plain sweet biscuits and coconut rather than oat condensed milk.
Storage instructions: keep in an airtight container in the fridge for 2 weeks, or 2 months in the freezer. Thaw in the fridge. They taste even better after a day or two.
