Spicy Pork and Peanut Noodles

These spicy pork and peanut noodles come together in 20 minutes and are the perfect easy weeknight dinner. Made with pork mince and a simple sweet, sticky flavourful sauce, this meal comes together quicker than you can order takeaway - and tastes so much better!

Ingredients

Sauce

  • ½ cup soy sauce
  • ¼ cup brown sugar
  • 2 tablespoons sesame oil
  • 1 tablespoon chilli sauce sriracha or sambal oelek
  • 2 cloves garlic minced

Noodles

  • 400 grams dried noodles
  • 500 grams pork mince
  • 1 tablespoon peanut oil
  • ¼ cup peanuts
  • 1 head broccoli chopped into bite-sized pieces
  • 1 teaspoon sesame seeds
  • chilli oil optional to serve

Instructions

  • In a small bowl or jar, whisk together all the sauce ingredients and set aside.
  • Bring a large saucepan of water to the boil and cook the noodles according to the packet directions. Add the broccoli to the pot for the final minute of cooking. Drain both the noodles and broccoli, then set aside.
  • Heat the peanut oil in a large frying pan over medium-high heat. Add the pork mince and cook until browned, breaking it up with a wooden spoon.
  • Add the peanuts, broccoli, and cooked noodles to the pan with the pork. Pour in the sauce and stir well. Cook for about 5 minutes, stirring frequently, until the sauce thickens and coats the noodles.
  • Sprinkle over the sesame seeds and drizzle with chilli oil (if using) and serve immediately.

Notes

Vegan/Vegetarian Option: Replace pork with more veggies or some crispy tofu.
