Rocky road is one of the easiest no-bake slices to make! This version has rich dark chocolate, mini marshmallows, glace cherries and pistachio nuts and is a family favourite treat for any time of year.
Rocky road is one of those things that combines things that are delicious on their own and makes them even better as they get mixed together in a single bite and I’m totally obsessed.
When looking at new recipes to publish I did consider whether the internet needed another rocky road recipe because it really is so simple to make, but I just feel like this blog wouldn’t be complete without it. Plus I really have to tell you just how much better rocky road is if you put pistachios in it!
What is rocky road?
Rocky road is a slice that’s made by melting chocolate and mixing through marshmallows, fruits, nuts, coconut, or other sweets and then slicing it up into bars after the chocolate has set. It’s a traditional treat that is enjoyed all throughout the year, but especially on special occasions such as Easter or Christmas.
It’s literally a throw everything in a bowl and mix kind of recipe which makes it perfect for kids or those that are not super confident around the oven.
You really don’t need much to make this simple no-bake dessert, just 5 ingredients and a bit of patience as you wait for the chocolate to set.
How to make rocky road
I cannot stress enough just how simple this recipe is to make.
Start by melting your chocolate. You want to use something good quality and delicious, and for me that’s the Darrell Lea dark chocolate blocks. Also Darrell Lea rocky road is the ultimate and this way, you’ve got your own homemade version.
I like to melt the chocolate in the microwave as I find it’s super easy, but you can also do it over a saucepan of water on the stove if you prefer.
To melt the chocolate, break apart the chocolate blocks into evenly sized pieces and place in a large glass bowl. Microwave for 30 seconds and then stir with a metal spoon. Microwave it again for 20-30 seconds and stir again. Depending on your microwave you may need one or two more bursts before the chocolate becomes thick and glossy.
The key is to make sure you always stir the chocolate between bursts in the microwave to ensure an even melt without any burnt bits.
Once you have your melted chocolate, it’s time to mix through your add-ins. A good rocky road will always have marshmallows as the main star. I like to use the mini ones for ease, but you can chop bigger ones in half as well.
Next is the coconut which is for both flavour and texture. Then a nut for extra crunch – traditionally it’s peanuts but here we are using pistachios to feel a bit more festive as it’s December.
And then finally some glace cherries. Dried cranberries or chopped up snakes (or other lollies) are also suitable options.
Once your add-ins are mixed through the melted chocolate, pour it into a square baking pan lined with baking paper and set aside in the refrigerator to chill for a couple of hours or until the chocolate has set.
Slice it up, serve, and store any remaining pieces in an airtight container in the refrigerator. It will keep for many weeks just like regular chocolate however I can’t ever see it lasting that long.
This rocky road is a great option when you have to take a plate to an event, or just to give as edible gifts, particularly around the holidays.
Rocky road is always a crowd pleaser, it’s no wonder it’s such a popular recipe in many kitchens around the country. Plus, it’s very easily customizable based on your tastes. Just keep the ratios the same and use your favourite chocolate and mix-ins to create a custom treat.

Easy Rocky Road
Ingredients
- 2 x 170-180 gram blocks dark chocolate
- ¼ cup desiccated coconut
- ⅓ cup pistachios
- ½ cup glace cherries
- 1 cup mini marshmallows
Instructions
- Line a 20cm square baking pan with baking paper and set aside.
- In a large microwave safe bowl, break up the chocolate into small pieces. Place the bowl in the microwave for 20-30 second bursts, stirring thoroughly between each with a metal spoon until the chocolate has melted and is smooth.
- Add the mix-ins to the melted chocolate and stir to combine. Pour the mixture into the prepared pan and smooth down with the back of the spoon so that it’s evenly distributed in the pan. Place in the fridge for at least 3 hours until the chocolate has set. Remove from the pan and slice into squares with a serrated knife. Store in the fridge in an airtight container.
