I don’t claim to be an expert on much, but avocado toast is something I feel very passionately about. I have sampled countless café versions of this classic (it’s safe to say if it’s on the menu, that’s what I am ordering) and I know what makes a good one and what makes an average one.
What has led me to posting this recipe today is a few bad cafe avo toast experiences recently that involved hardly any avocado, burnt toast (or not at all toasted) and no seasoning. It was a bit of a let down to pay up to $25 for an average meal that really isn’t that difficult to make at home.
And I’m sure we all remember that viral comment by a millionaire telling millennials that if we stopped buying avo toast we could afford to buy a house… Well if saving for a deposit is your current goal, I got you, you can still have your avo toast at home and it’s probably going to be better anyway.
Sooo here you have my claim to be the best avocado toast that will rival your favourite cafe and save you a few dollars in the process.
And let me tell you right now that there is no beetroot hummus anywhere to be found here because that adds no value on my plate. Cafes, can we be done with that now please?
Key Ingredients
Now there are a few variations you can make when creating your own avocado toast, but for this base version, you’ll need the following ingredients.
Note all ingredients and their quantities are laid out in the recipe card at the bottom of this post.
- Avocado – depending on the size of your avocados, it’s approximately one per person. You can use whatever avocado is in season, most commonly that will be hass or shepard but I’ve used reed in today’s post as they were so perfectly ripe at my local veggie shop.
- Bread – for your toast, use a firm and chewy loaf of bread that’s been thickly sliced. I like either a sourdough or pane di casa.
- Feta – completely optional but is traditional and adds a delicious salty flavour that balances the dish. I like to use the Dodoni brand lactose free Greek feta but you can also use a vegan feta substitute as well to keep the dish vegan and dairy free.
- Lemon – an essential seasoning that adds brightness to the avocado.
- Salt and pepper – seasoning is so essential to your avocado to ensure it’s not bland.
- Everything bagel seasoning – you could just use a sprinkle of garlic powder and sesame seeds for a similar flavour and texture on top, but this everything bagel seasoning is a great addition to your pantry and breakfasts.
- Sprouts – for garnish and to make this café quality, I’ve also topped my avocado toast with fresh pea sprouts but you could use any micro greens or omit.
Step-By-Step Instructions
This smashed avocado on toast is simple to prepare which is perfect for mornings when you want a fancy breakfast but don’t want too much effort.
Thickly slice your bread and toast. If I am doing a few slices at once I will often drizzle with a little olive oil and place under the grill to toast. Once the bread is golden and crunchy, remove and set aside on your plate.
Peel the avocados and roughly chop them into chunks. Add the avocado into a bowl and gently mash with a fork until chunky. Season with salt and pepper and a generous squeeze of fresh lemon juice. Mix to combine, taste and adjust seasoning as necessary.
To construct your avocado toast, pile the avocado over the toasted bread. Sprinkle over some crumbled feta followed by the everything bagel seasoning. Finally finish with a little of the pea sprouts for garnish and extra lemon wedges.
Serve the avocado toast immediately with a cup of coffee or juice and I guarantee you’ll feel like you’re at a fancy cafe!
Tips for constructing the perfect avocado on toast
Now this recipe is designed to be your basic avo toast. It ensures the avocado is the hero and keeps things nice and simple. But if you’re feeling ready to experiment a little and go off book, I have some tips on the essential structure of avocado toast that you can follow as you build your own variations.
The bread – the base of our toast, we want to make sure it’s got good structure, that it won’t go soggy once piled high with our toppings. It should be crunchy and chewy but not so hard that you can’t cut it with a knife. So a well toasted sourdough is always a good option.
The texture – the texture of your avocado is essential to combine with the crunchy bread. You don’t want a super smooth puree yet you also don’t want to just slice up the avo and place it on top of the bread. The key to the smooth yet chunky texture is to first cut up the avocado into chunks with a knife and then just very gently mash it a little with a fork so you get that variation of textures. It’s creamy, it’s chunky, it’s exactly smashed av perfection.
The seasoning – avocado let’s face it is a little bland if not well seasoned therefore this is the most essential part. Use a generous amount of salt, pepper and lemon juice to get that flavour and balance just right. If you’re feeling a little extra sometimes I like to add in a little sprinkle of garlic powder as well which is super delicious! You can also use lime instead of lemon if that’s all you have but that acidity is what we need here.
The sprinkle – what you’re looking for is something crunchy and something salty. This could be a sprinkle of crumbled feta, toasted sesame seeds, dukkah, or my current preference; everything bagel seasoning.
The extras – this is where you can elevate your avo toast and make it a little extra. Additions could be a perfectly poached egg, some greens (sprouts give it that fancy cafe look), fresh tomatoes, or dare I say it, bacon? And sure, if you really want the beetroot hummus, go for it.

Ingredients
- 4 thick slices sourdough bread
- 1 tablespoon olive oil
- 2-3 ripe avocados
- 1 lemon
- Salt and pepper to taste
- 40 grams feta crumbled
- Everything bagel seasoning to sprinkle
- Pea sprouts for garnish
Instructions
- Drizzle the olive oil over the sliced bread and place on a tray under the grill to toast until golden brown. Turn the slices over so that both sides are toasted and golden.
- Peel the avocados and roughly chop them into chunks. Add the avocado into a bowl and gently mash with a fork until chunky. Season with salt and pepper and a generous squeeze of fresh lemon juice. Mix to combine, taste and adjust seasoning as necessary.
- Pile the avocado mixture over the toasted bread. Sprinkle over the crumbled feta followed by the everything bagel seasoning. Finally finish with a little of the pea sprouts for garnish and serve immediately with extra lemon wedges.
