There is something really satisfying about starting the day with a green smoothie. It gives me this kind of healthy food confidence that because I had kale for breakfast, I make better food choices throughout the day. And even if I do indulge, who cares because I had kale for breakfast.
Balance is our friend here.
I have tried so many green smoothies in my time. I started drinking them in the lead up to my wedding because I definitely wanted naturally clear and glowing skin. I can feel the impact of my diet on my skin particularly my face and breakouts can generally be traced back to increased oily foods or chocolate in my diet.
So the only real answer was that I had to eat more vegetables, and vegetables can be boring. But in a smoothie mixed with fruit and other yummy things? Yeah, alright I can do that.
After trying many combos with kale, apples, banana, spinach, lemon juice, chia, cucumber, and everything else you can imagine (including blueberries which when combined with kale produce a grey/brown drink that is very unappetising), I feel very confident in saying this is the best green smoothie I have had.
Why is it the best? Almond milk. All of my previous attempts at green smoothies involved me using coconut water which is naturally quite high in sugar and results in more of a green juice and the kale, well it never really breaks down. It was ok, I didn’t mind it. Until I realised that it didn’t have to be that way.
The almond milk makes this smoothie super smooth and creamy and the added protein ensures that I don’t get crazy hungry an hour later when the sugar crashes like with many high fruit smoothies. I use the vanilla almond milk because I like the flavour and it works really well in this smoothie. You can use plain if you prefer though.
The other key to this green smoothie is the mango. How good is mango?? It makes everything better. In this case because it is blended up it works just fine (better?) with frozen mango as you don’t need to add ice and can have mango all year round. I do love frozen fruit for this reason. The flavour of the mango works perfectly with the kale and cuts the harshness of the flavour making it just a yummy combo.
This smoothie is rounded out with a couple of dates to add that little extra sweetness, or you could use a tablespoon of honey if you prefer. I like the dates as even though they are little pockets of sugar, I find the flavour just works well and gives me just the sweetness I need.
This smoothie is seriously easy to make. Grab your blender and let’s go.
Firstly we have the mango & dates, then throw in the kale.
Add almond milk and blend until creamy.
Pour into a glass and enjoy the yummy healthiness.
This really easy 4 ingredient breakfast has been my go to combo lately. I’ll switch up my week having these smoothies or an egg on toast depending how I feel in the morning. This smoothie means that I am starting my day already with a serve of fruit and vegetables, and actually keeps me full through my morning.
Give it a go, kale has never been this delicious! You and your skin can thank me later 😉
