Peanut butter stuffed dates are a delicious little sweet snack or dessert. They are super easy to prepare and require just a few ingredients. With the rich and sticky caramel flavour of the medjool dates, the creamy peanut butter and just a little drizzle of dark chocolate and sea salt, these will be your go to healthy snack!
This is hardly a recipe, rather it’s a sweet and healthy treat that I first encountered on a yoga retreat last year. I don’t know where the origins of this recipe come from but I do know I see a version of these dates pop up on occasion in health vlogs or reels online – they are popular and there is a good reason for it.
I know how important it is to have healthy snack options on hand when the hunger hits and these are a go to when needing something chocolatey and sweet that is still going to fit within the constraints of a healthy and balanced diet.
This is my way of making them, which really is very basic but let me tell you that I am currently obsessed with these dates. I mean, we’re stuffing dates with peanut butter and topping them with chocolate and sea salt. What is not to like here?
We’re using medjool dates here and while you can of course use cheaper dates, medjool dates have that delicious soft texture and the rich caramel flavour that you really can’t beat when it’s the hero. Medjool dates are also high in antioxidants and are a great nutrient dense snack.
I love making a batch of these stuffed dates with peanut butter for meal prep and enjoying one (or two) a night after dinner with a cup of tea. They are no-bake and vegan, making them also a great option to bring to a work morning tea or add to a snack platter when entertaining.

- Medjool dates – while you can use any dates, medjool dates work best for their natural sweetness, caramel flavour and soft and sticky texture.
- Peanut butter – both smooth and crunchy work here so use what you prefer. You can also use a natural peanut butter like I did or this recipe is also super delicious with a more processed peanut butter. Really anything works, just use your favourite.
- Vegan chocolate – use a good quality dark chocolate that you know to be vegan.
- Flaky sea salt – honestly I think adding that sprinkle of salt takes these dates to the next level with that perfect salty-sweet combination. If you don’t love salty with your sweet you can skip however.
Step-By-Step Instructions
These no-bake peanut butter stuffed dates with chocolate couldn’t be easier to make.
Start by removing the stone from your dates. Do this by gently slicing the date lengthways (being careful not to cut all the way through) and use your hands to pry them open and pull out the stone.
Now, you just spoon your peanut butter into this cavity. How much will depend on the size of your dates but approximately a heaped teaspoon will do the trick.
Melt your dark chocolate using the microwave in a small glass bowl in 20 second intervals, stirring well between each. Drizzle the melted chocolate over the dates.
If you prefer, you can use more chocolate and actually dunk the entire date into the melted chocolate to give it that candy bar style chocolate coating.
Finish off the dates with a sprinkle of flaky sea salt and set the dates aside on a plate or tray in the fridge until the chocolate has set (min 20 minutes). From here, you can transfer them to an airtight container and store in the fridge for up to a week.

Ingredients
- 450 grams medjool dates approx 20 dates
- ⅓ cup peanut butter
- 40 grams dark vegan chocolate
- 1 teaspoon flaky sea salt
Instructions
- Using a knife, cut a slit along each date and remove the stone.
- Place a heaped teaspoon of peanut butter into each date.
- Gently melt the chocolate in a small microwave safe bowl in 20 second intervals. Drizzle the chocolate over the top of the peanut butter stuffed dates.
- Sprinkle a little flaky sea salt over the top and let the dates chill in the fridge on a tray or plate until the chocolate has set. Store in an airtight container in the fridge.
