I am all about making easy and delicious air fryer recipes at the moment, and after posting my favourite air fryer fish tacos, I decided that I needed a good vegetarian taco recipe to add to the list.
I topped them with some red cabbage, avocado, and a spicy dairy-free yoghurt sauce that is very similar to the one in the fish tacos recipe—you might say I’m a little obsessed with it.

Key Ingredients
These cauliflower tacos are packed full of colourful veg making them a great easy and healthy weeknight dinner.
Note all ingredients and their quantities are laid out in the recipe card at the bottom of this post.
- Cauliflower – you’re looking for a medium-small sized whole cauliflower for this recipe.
- Eggs – used to make the breadcrumbs stick to the pieces of cauliflower.
- Taco seasoning – to make this a super easy and quick recipe we’re just using a packet of store bought taco seasoning.
- Breadcrumbs – I prefer to use panko breadcrumbs as that’s what I usually have on hand but you can use any. This is going to make our pieces of cauliflower nice and crispy.
- Soft tacos – (not pictured above) I like using the street-style flour tortillas for these tacos but you can also use corn tortillas if you prefer.
- Sauce – for these tacos we are making a quick sauce from dairy free Greek-style yoghurt, sriracha and lime juice. You can replace the yoghurt with a dairy free sour cream or mayonnaise instead.
- Toppings – red cabbage and avocado keep the toppings for these tacos simple but you can also use a premade slaw. Serve with lime wedges and coriander (cilantro).
Step-By-Step Instructions
To make these air fryer roasted cauliflower tacos you’ll of course need an air fryer. I am using my Philips Essential Air Fryer which is a smaller, basket style one at 4.1 Litres and therefore I am cooking my cauliflower in two batches.
If you don’t have an air fryer, you can of course instead bake the cauliflower in the oven at 200°C (400°F) for 20 minutes instead.
Start by chopping up your cauliflower into bite sized florets and then whisk together the eggs in a large mixing bowl. Add the cauliflower to the eggs and toss well to ensure all of the cauliflower pieces are coated.
In another bowl, mix together the tacos seasoning with the breadcrumbs. Dip each piece of cauliflower into the breadcrumbs, until coated well and repeat with all of the cauliflower.
Preheat your air fryer to 200°C (400°F) for a few minutes and arrange the cauliflower florets in a single layer in the air fryer basket.
Cook the cauliflower for 10-12 minutes, shaking the basket halfway through, until the cauliflower is golden brown and crispy. Repeat this process until all cauliflower is cooked as needed depending on the size of your air fryer (I need 2 batches).
While the cauliflower is cooking, make a quick sauce by combining the dairy-free Greek-style yoghurt, sriracha, lime juice, salt, and pepper in a small bowl. Adjust the quantities depending on your tastes.
Once the cauliflower is ready, it’s time to assemble your tacos! Heat the tortillas in a dry frying pan or in the microwave for a few seconds. Add some thinly sliced red cabbage and a few slices of avocado and top with a few pieces of the roasted cauliflower in each taco. Drizzle with the spicy yoghurt sauce and serve immediately with lime wedges and fresh coriander (cilantro) if you like.
Recipe FAQs
This recipe as written is not vegan as it uses eggs to help the breadcrumbs stick to the cauliflower florets. For a vegan version, you can make a slurry of water and cornflour instead and dip the cauliflower into that and then the breadcrumbs. I use this method in my tofu katsu curry recipe in my ebook COMFORT. Use about ½ cup cornflour mixed with water.
Yes you can adapt this recipe to be gluten-free by using your favourite swaps. Swap the breadcrumbs for gluten-free breadcrumbs and use corn tortillas instead of flour.
Yes! If you don’t have an air fryer, you can bake the crumbed cauliflower pieces in the oven instead. Place the pieces of cauliflower on a line baking tray and bake at 200°C (400°F) for 20 minutes, turning halfway through.
