These healthy berry bites are a great snack to grab when the afternoon chocolate craving hits! Make a batch on the weekend for a yummy, energy packed treat when you need it without all the guilt.
I never really liked cherry ripe chocolate bars when I was a kid, but as I grew up I realised that there was something to this chocolate and berry combination. It’s the richness of the chocolate with the contrast of sweet and tart flavours of the berries that make it work so brilliantly. Eating these berry bites remind me of a cherry ripe bar and are just what I need when a little chocolate craving hits.
I was reminded of this flavour combination again when I tried some pre-packaged healthy snack balls made from a combination of cashews, dates, coconut, cacao powder and cranberries, and I knew that this was something I could easily create at home. Having already made a peanut butter and caramel version, it was as simple as working out the best ratio of ingredients and blending them all together into delicious chocolatey berry bites.
I’m sure I am not the only one who always has the good intention to try and make healthy food choices throughout the day however I have learnt that the only way to actually make sure this happens is to ensure you have plenty of healthy food easily available around you. These balls are great for this as you can throw a couple in your lunch box for afternoon tea, or keep them in the fridge ready for any time a little hunger hits making it easy to make a healthier choice.
There is really nothing to this recipe, throw all of the ingredients in a food processor and blend until smooth and sticky. Roll into balls and cover with more coconut. Store them in an airtight container in the fridge for up to two weeks so you can easily grab one when you need that chocolate berry treat.
You can use this ratio to play around with different flavour combinations. Change the cranberries for your favourite dried fruits – apricots or blueberries would be amazing. You can also use almonds instead of the cashews, the texture will just be a little less soft. Completely up to you, add and change as you like with what you have. Also if you want something different make sure to try the peanut butter and caramel balls which use peanuts instead of cashews, or try these no-bake lamington bars for something a little different but based off the same ingredient ratio.
These healthy berry bites are perfect to make on the weekend ready for a healthy snacks throughout the week. Plus they are super easy to make with no fancy ingredients required!
