This quick and delicious hoisin chicken stir fry is the ultimate dairy free weeknight dinner, ready in just 20 minutes. With chicken mince and crisp green beans, all coated in a rich, savoury hoisin sauce, it’s perfect served over rice for a delicious and simple dinner you’ll want on regular rotation.
One of my favourite ways to develop recipes for Eight Forest Lane is by accident. That is exactly how this one came about. One night I looked in the fridge, with nothing planned for dinner, and just started pulling out a few simple items and threw them together.
A few days later I just had to make it again to make sure it wasn’t a fluke. Because this has to be one of the simplest recipes yet it is so full of flavour that every time I make it I can’t believe just how delicious it is!
I usually only buy chicken mince when I plan on making my Thai-style chicken meatballs, but honestly it’s such a versatile ingredient that it deserves a place in the regular grocery list.
This stir fry uses hoisin sauce as the key flavour element, and just like with my hoisin pork stir fry, it adds so much flavour, especially when combined with the crunchy peanuts. This really is a must make weeknight dairy free dinner recipe that you need to add to your meal plan!

This recipe was created to use minimal ingredients while ensuring maximum flavour so they all play a key role in this dish.

- Chicken mince – you can use chicken breast that has been finely diced, but the chicken mince is easy and creates these delicious, flavourful and caramelised pieces that are so good!
- Green beans – I like beans with the chicken for this recipe, plus they are a great vegetable to keep on hand as they last a while in the fridge. You can however substitute with any green vegetable you have or like.
- Spices – the secret to making this dish so quick and easy is that instead of fresh, we’re using both garlic and onion powder and ground ginger. This means no prep work and still adds so much flavour to the chicken!
- Hoisin sauce – the real hero of this dish! Adds a rich, salty, sweet, and savoury flavour.
- Soy sauce – seasons the sauce, adding more salty, umami flavour when combined with the hoisin.
- Peanuts – make sure to use unsalted peanuts.
- Chilli oil – while this is technically an optional garnish, I just think it adds so much extra flavour and really elevates the dish. I highly recommend trying it with one you love.
- Fresh Thai basil leaves – again optional but if you can, the addition of the fresh Thai basil leaves again adds a really delicious flavour and freshness.
Step-By-Step Instructions
This is seriously one of my go to weeknight dinners because it’s just so simple and easy to make and I love eating it – even more so when I get it for lunch the next day!
For this stir fry, I don’t bother with my wok and I just use a frying pan with taller sides. Start by heating the peanut oil over medium-high heat and add the chicken mince, breaking it apart with a wooden spoon. Cook for 3-4 minutes or until it is browned and cooked through.
Add in the garlic powder, onion powder, and ground ginger, cooking for another minute until fragrant.To the chicken, add in the green beans and continue to cook until they are tender.
Pour in the hoisin sauce and soy sauce, stirring well to combine. Cook for an additional 1-2 minutes until everything is heated through. Turn off the heat and stir in the chopped peanuts.
Serve the hoisin chicken stir fry over cooked white rice with a drizzle with chilli oil if desired and garnish with a handful of fresh Thai basil leaves. It’s so good!

- 500 g chicken mince
- 200 g green beans trimmed
- 1 tablespoon peanut oil
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
