Ever since we did our kitchen renovation and bought an oven with a temperature setting that is just called ‘pizza’, I have been making homemade pizza every chance I get. It’s the perfect Friday night at home dinner that is low effort but feels comforting and cosy after a long week. It’s also great when you have guests and want something yummy and homemade but still easy.
I simply can’t justify the cost and the hassle of ordering pizza when I know just how good homemade pizza tastes, plus you can load up your toppings however you like. Seriously if you haven’t tried making your own pizza base, then follow my recipe and give it a try as I promise it’s a game changer.
But if you’re wanting things even easier, you can totally just use a store bought pizza base and you’re still enjoying the benefits of cooking at home.
Key Ingredients
You really are only needing a handful of ingredients to make this simple BBQ chicken pizza. Feel free to get creative with toppings though and add what you like!

- Pizza dough – I am obsessed with making my own pizza crust as it’s so incredibly simple to make yet tastes so much better than anything store bought. This is the pizza dough recipe that I make at least once a fortnight. It makes enough dough for two large pizzas so you can freeze half if needed.
- Chicken – for this pizza you will need cooked shredded chicken. The easiest is shredding the meat from a store bought rotisserie chicken which is super convenient, but you can also use leftover roast chicken or follow this method for how to poach chicken breast.
- BBQ sauce – this is the hero of this dish so you know we have to use a good quality sauce! I absolutely love the Sweet Baby Ray’s Original for the best flavour but use any you know you like.
- Dairy free cheese – for the cheese you can really use any you like. I use dairy free mozzarella and I like the Bio brand from Woolworths and Coles as it does melt more than other brands I’ve used. If you’re not dairy free, feel free to use regular mozzarella or lactose free shredded cheese depending on your diet / preference.
- Red onion – a sprinkling of thinly sliced red onion adds that classic BBQ chicken taste you’d expect from your favourite takeaway.
- Parsley – optional, but as this is a fairly rich and sweet pizza from the sauce, I find the parsley just adds a little extra freshness and balance. You can also use coriander (cilantro) if that’s your preference.

Step-By-Step Instructions
To make this homemade pizza, you will first need to start by making the pizza dough. I have a full recipe fundamentals blog post all about how to make homemade pizza dough so you can use that as your guide.
The main thing though is if you’re making your own pizza dough, you will need to allow your dough to rise for about an hour so make sure to plan enough time for that when prepping for dinner.
Once you have your dough prepared, you’ll need to stretch it out. The best way I’ve found to do this is firstly ensuring your dough is room temperature, and then placing it on a sheet of baking paper to make transferring it to your pizza stone or baking tray easy. From here, start pressing the ball of dough out in a circular shape. Keep pushing the dough from the centre outwards, until the dough has been stretched to your desired shape and thickness.


From here, add half of the BBQ sauce over the base of the pizza leaving a small border around the edges for the crust. Add the remaining half to a bowl with the shredded chicken and mix well to combine. You can adjust the sauce amount to be more or less depending on your preference.
Sprinkle half of the dairy free mozzarella cheese over the base of the pizza, followed by the BBQ chicken. Scatter over the thinly sliced red onion, followed by the remaining cheese.


Carefully slide the pizza (with the baking paper) onto a preheated pizza stone or baking tray. Bake for 10-15 minutes or until the crust is golden, and the cheese is melted and bubbly. Sprinkle over the chopped parsley and once the pizza has cooled for a few minutes, slice and serve.
👉Tip! If you love making pizza at home, then I recommend investing in a pizza stone. They are relatively inexpensive and help ensure a crisp and even crust without the need for a fancy pizza oven.


Recipe FAQs
You can use a pizza paddle for this, but the easiest method is to stretch out your pizza dough onto a sheet of baking paper. Carefully slide the baking paper with the dough onto a flat baking tray to carry it to the pizza stone. Then, slide the pizza (still on the baking paper) onto the stone. You can use the baking paper to help slide the pizza off onto your serving board for cutting, avoiding direct contact with the extremely hot stone.
Store any leftover pizza in an airtight container in the fridge for up to 3 days. Reheat it in the oven or air fryer at 180°C (350°F) for about 5-7 minutes to keep the crust crisp.

- ½ recipe homemade pizza dough or 1 store bought pizza base
- ½ cup BBQ sauce approx
- 1 ½ cups shredded cooked chicken
- 1 cup dairy free mozzarella cheese
- ½ small red onion thinly sliced
- Chopped fresh parsley to garnish
Instructions
- Preheat your oven to 250-260°C (450-500°F). If you have a pizza stone, place it in the oven while preheating for the best results. Alternatively, use a heavy-duty baking tray.
- Stretch out your pizza dough on a sheet of baking paper to your desired size and thickness. Work by pressing the dough outwards using your fingers. If you’re using a store-bought base, simply lay it flat on a piece of baking paper.
- Evenly spread half of the BBQ sauce over the base of the pizza leaving a small border around the edges for the crust. Add the remaining half to a bowl with the shredded chicken and mix well to combine.
- Sprinkle half of the dairy free mozzarella cheese over the base of the pizza, followed by the bbq chicken. Scatter over the thinly sliced red onion, followed by the remaining cheese.
- Carefully slide the pizza (with the baking paper) onto the preheated pizza stone or baking tray. Bake for 10-15 minutes or until the crust is golden, and the cheese is melted and bubbly.
- Remove the pizza from the oven and allow the cheese to cool slightly. Sprinkle over the chopped parsley before slicing and serving.
