BBQ Meatball Rice Bowls

These BBQ meatball rice bowls are a great example of the simple dinners I love to make on busy weeknights. Oven baked beef meatballs are tossed in a rich BBQ sauce and served over rice with roasted corn, lettuce, pickled onion and a good drizzle of dairy free ranch dressing. It’s simple but packed with so much flavour, you’ll be repeating this one regularly!

I‘ve been thinking about the kind of food and recipes I want to share in 2026 and I keep coming back to a desire to empower you with ideas that help make cooking feel fun and enjoyable. So I’ve decided to share more of these types of recipes that aren’t really recipes but what I like to call, “it’s just putting food together”.

The basis for this BBQ meatball bowl recipe is my rice bowl recipe formula; base + protein + veg + sauce = dinner. Once you have this formula down, then it’s incredibly easy to build a flavourful and simple dinner using food you already have in the house.

Dinner doesn’t have to be complicated, we just need different ways of thinking about it.

Using this formula, this is the exact dinner I built for my husband and I one night when I didn’t want to go to the shops as we were about to go away for a few days. The inspiration is purely based on the ingredients I had on hand, put together in a way that makes sense based on countless dinners I’ve thrown together when I didn’t want to go to the shops.

Key Ingredients

This BBQ meatball bowl is a guidelines recipe when you’re looking for a simple way to enjoy beef meatballs or when you just need some inspiration for a delicious and easy dinner.

Guidelines Recipe (noun): A recipe that politely suggests what to do, then happily forgives you when you do something else entirely. Swap the veg, change the grain, forget an ingredient, it doesn’t matter, it’ll still be good. Much like my BBQ chicken bowl, which also makes an easy, solid dinner.

  • Base = white rice. I always have it in the pantry as I buy the big bags. Cauliflower rice would make a great low carb option.
  • Protein = beef meatballs. Make your own using my simple beef meatball recipe, meal prep some for the freezer or pick up a bag of frozen meatballs to make life even simpler.
  • Veg = I am using carrot, lettuce and corn as that’s what I had, however this is super flexible based on whatever you have leftover in the fridge. An alternative option would be a package of coleslaw or even some frozen steamed veg!
  • Sauce = BBQ sauce. We are not getting fancy here, just my ride or die Sweet Baby Rays Original gives us deliciously rich and saucy meatballs.
  • Sauce, again = Ranch. Because two sauces are better than one of course! I am using my homemade dairy free ranch which works so well with the rich BBQ sauce, but you can use mayo if you want something quicker/simpler.
  • Extras / toppings = pickled red onions. Not always required but these simple homemade quick pickled red onions add so much extra flavour to these bowls and really balance out the richness of the BBQ sauce. It’s so good!

Step-By-Step Instructions

Cook the meatballs. Place the beef meatballs on a baking tray and cook for about 20 minutes, or according to packet instructions, until cooked through. Toss them with the BBQ sauce until well coated.

The rice added to the bowl with all the other elements prepped.

Cook the rice. Cook the rice (I recommend using a rice cooker) and divide the cooked rice between serving bowls.

Assemble the bowls. Top with the BBQ-coated meatballs, corn, pickled red onions, and shredded iceberg lettuce.

Finish. Drizzle with dairy free ranch dressing and serve immediately.

Meal Prep and Storage Instructions

This BBQ beef meatball rice bowl is great for meal prep, especially if you keep the components separate.

For meal prep, cook the rice and meatballs and allow them to cool completely. Store the rice, BBQ-coated meatballs, corn, pickled red onions, and shredded lettuce in separate airtight containers in the fridge. This keeps everything fresh and prevents the lettuce from wilting.

When ready to eat, reheat the rice and meatballs until warmed through, then assemble the bowls with the cold ingredients. Drizzle with dairy free ranch dressing just before serving.

Leftover components will keep well in the fridge for up to 3 days. The pickled red onions will last much longer and can be used in other salads and bowls throughout the week.

Recipe FAQs

Can I use brown rice instead of white rice?

Yes! Brown rice works perfectly for a little extra fibre. Just make sure to adjust the cooking time according to the packet instructions.

Can I make this vegetarian?

You can! Just use your favourite vegetarian meatballs instead. You could also substitute the meatballs with air fryer tofu nuggets.

Ingredients

  • 10-12 frozen beef meatballs approx. 250 grams total, or use homemade beef meatballs
  • ¾ cup white rice uncooked
  • ½ cup BBQ sauce
  • 1 cup corn kernels cooked or canned, rinsed and drained
  • ½ cup pickled red onions
  • 1 ½ cups shredded iceberg lettuce
  • dairy free ranch dressing for drizzling

Instructions

  • Preheat the oven to 180°C (350°F). Cook the rice according to packet instructions, using a rice cooker if you have one.
  • Bake the beef meatballs for about 20 minutes, or according to packet instructions, until cooked through. Transfer the meatballs to a bowl and toss with the BBQ sauce until well coated.
  • Divide the rice between serving bowls. Top with the BBQ-coated meatballs, corn, pickled red onions, and shredded iceberg lettuce.
  • Drizzle with dairy free ranch dressing and serve immediately.

Notes

Roasted corn: If using fresh corn, cook it first by spraying with a little olive oil and seasoning with salt and pepper. Air fry for 11-12 minutes for perfect roasted corn!
Storage Instructions: Store cooked rice, meatballs, corn, pickled onions, and lettuce separately in airtight containers in the fridge for up to 3 days. Reheat the rice and meatballs, then assemble the bowl with the fresh ingredients and drizzle with dairy free ranch just before serving.
