You guys, I know this is basically not even a recipe but it is too good to not share with you. You see, I want you to know that a super delicious and refreshing mocktail exists that uses really basic ingredients and can be thrown together super quickly.
This drink tastes good. It doesn’t just taste like lime and soda water, because here is the secret or the key or whatever you want to call it that makes this a fantastic replacement for a boozy cocktail – we don’t use soda water, we use tonic water instead.
I was first introduced to this by a bartender at a local cocktail bar when I was doing dry January but still wanted to partake in drinks out with friends. The bartender made me their signature mojito sans alcohol and swap soda for tonic. And gosh it was good. I would happily drink that dry January or not.
The sharp acidic, slightly bitter but a little sweet taste of tonic water adds that extra something to this mocktail in place of the flavour that alcohol usually provides. And while it doesn’t taste like rum, when combined with a bunch of fresh mint and lime, well it’s a drink I get excited about enjoying.

Key Ingredients
There is nothing out of the ordinary in this ingredient list when you think about a classic mojito using just 4 ingredients.

- Simple syrup – the sugar element to our drink giving it a hint of sweetness. While you can buy premade simple syrup, it’s super easy to make yourself and store in the fridge. See the recipe card notes for how I do it.
- Mint and Lime – fresh mint and lime gives this mocktail it’s signature flavours.
- Tonic Water – this is the key to the flavours of this mojito being more than just flavoured soda water and therefore I recommend giving it a try. You can use regular or sugar free, whichever you prefer. If you really are against the taste of tonic, then feel free to use soda water instead just know it’s not going to have as complex flavours.
Step-By-Step Instructions
Mojitos are one of the common cocktails that require the process of ‘muddling’ the mint leaves with the lime and sugar. Basically this process mashes the leaves to release their flavour making the drink more delicious.
While we are adding an extra step to your drink making process, you don’t have to have a fancy cocktail tool to achieve this at home. Sure you can buy a muddler but you can also either use a mortar and pestle and then transfer the mixture into your glass, or (and this is my preference) use the end of your rolling pin! It works perfectly!
To start, you’ll need to make sure you have simple syrup. You can make this ahead of time and keep it stored in the fridge for a couple of weeks or use a store bought one, but it’s really simple (as the name suggests) to make at home. Just boil together equal parts water and white sugar and let it cool.
To make your mojito, you’ll need a highball glass. Add in your simple syrup, mint leaves and lime juice and use your rolling pin to muddle everything together.
Fill the glass with ice, add a slice of lime and then top with your tonic water. How much tonic exactly will depend on the size of your glass.
Use a long handled spoon to mix everything together, add a sprig of fresh mint to the top, and that’s it!

Variations
While keeping the classic combination of lime and mint flavours is delicious, so is changing it up! Give one of these options a try when you’re wanting something different.
- Use another citrus such as lemon or orange instead of lime.
- Omit the sugar syrup and use 1-2 teaspoons of blueberry sauce to create a blueberry mojito!
Does this mojito mocktail taste like rum?
No, we’re not replacing the rum taste but thanks to the tonic water this mocktail has a sharp acidic, slightly bitter but a little sweet taste that replaces the flavour usually added by the alcohol thanks to the added quinine.

Ingredients
- 1 tablespoon simple syrup see notes
- 1 tablespoon fresh lime juice
- Small handful fresh mint leaves
- Tonic water
- Slice of fresh lime
Instructions
- Add the simple syrup, lime juice and fresh mint leaves to a highball glass. Muddle the leaves with the juice and syrup using a cocktail muddler or the end of a rolling pin.
- Fill the glass with ice, add a slice of lime and top with tonic water.
- Use a long handled spoon to mix the drink and garnish with fresh mint.
