Weekly Meal Plan #9

A little bit of everything this week, from a speedy teriyaki beef bowl to a creamy garlic prawn pasta that feels fancy but comes together in 15 minutes. We’ve also got a cosy potato and leek soup with the most delicious bacon crumb and my all time most popular recipe – the classic sausage rolls. They make the best weekend treat or snack!

This week’s menu

Find below your five dinners for the week plus an optional bonus. Under that is your shopping list to print or tick off as you go, then a prep-ahead plan and a few notes to make sure you use up every ingredient. Everything is dairy free, with the gluten free swaps and allergens flagged.

Dairy Free Potato and Leek Soup with Bacon Crumb

Bake a loaf: start a batch of no-knead bread the night before.

Nothing goes to waste

A handful of ingredients stretch across more than one meal. Buy once, use it up:

  • Garlic → runs through the prawn pasta, the chicken tray bake and the soup.
  • Lemon → flavours the chicken tray bake and a squeeze finishes the prawn pasta.
  • Bacon → a little in the soup crumb and again in the sausage rolls.

Your prep plan

  • Bake a loaf of no-knead bread for soup night — start the dough the night before, it’s hands-off.
  • Prep the sausage rolls ahead and freeze for easy meals or after school snacks.
  • The prawn pasta (15 min) and teriyaki beef (25 min) are your quick wins.
  • Make the soup ahead — it only gets better the next day.
