It is only just the start of summer but it is HOT in Queensland already. As the temperatures rise I want this ice cold, refreshing watermelon lime mocktail in your life to keep you hydrated and living your best summer life.
This sparkling watermelon and lime mocktail is made to be sipped by the pool. I mean, I don’t have a pool, but while I manifest that, I’ll be bringing a pitcher of this to my friend’s house who already has the pool because that to me is the best part of summer.
This is the perfect mocktail to batch and serve to a group of friends. And of course, if you want to, you can make it a cocktail by adding a splash of vodka or white rum to the glass.

You only need 4 ingredients to make this super refreshing non alcoholic sparkling watermelon drink.

- Watermelon – fresh, perfectly ripe and sweet seedless watermelon is the hero of our drink. If your watermelon is ripe, then you don’t need any added sugar as it is sweet enough.
- Lime – fresh lime juice is going to give this drink a tangy and fresh taste that pairs so well with the watermelon. You can use fresh lemon juice as well if you like.
- Soda water – the carbonation of the soda water makes this drink a little extra special. If you prefer a sweeter drink, you can also use lemonade.
- Mint – a few springs of fresh mint at the end just adds extra freshness and flavour, I highly recommend it!
Step-By-Step Instructions
Start by cutting your watermelon into cubes, discarding the rind and white parts as these can taste bitter. Juice 3–4 limes to get approximately ⅓ cup of fresh lime juice.
Add the watermelon cubes and lime juice to a blender. Blend until smooth, using a tamper if needed to help the watermelon blend evenly. Depending on the amount of juice you want to make and the size of your blender, you may need to work in batches.
Strain the blended watermelon juice through a fine-mesh strainer, then pour the juice into a jug.
To serve, fill glasses or a large pitcher with crushed ice and pour the watermelon lime juice halfway up. Top with soda water, and garnish with a lime slice and fresh mint leaves.
👉Tip! Don’t have a fancy ice machine? Make crushed ice easily by placing ice cubes in a zip-lock bag and hitting them with a rolling pin.

- 4 cups cubed fresh watermelon
- ⅓ cup fresh lime juice approximately 3–4 limes
- 4 sprigs fresh mint
- Soda water
- Extra lime slices for garnish
Instructions
- Cut the watermelon into cubes, discarding the rind and any white parts. Add the watermelon cubes and lime juice to a blender and blend until smooth, using a tamper if necessary. If your blender is small, work in batches to blend all the watermelon.
- Pour the blended mixture through a fine-mesh strainer to remove any pulp, then transfer the strained juice to a jug.
- Fill glasses or a large pitcher with crushed ice. Pour the watermelon lime juice into each glass or pitcher until it’s halfway full. Top with soda water to fill the remaining space. Garnish each glass with a sprig of fresh mint and a lime slice, then serve immediately.
