These sausage and egg smash tacos are the most delicious and easy savoury breakfast. Made with beef sausages, soft scrambled eggs and a quick smashed avocado, these breakfast tacos are the perfect way to start the morning. Plus they cost just $2.87 per serve!
Breakfast food has got to be my favourite! Seriously I wake up excited, especially on weekends when I think about what I get to eat.
Whether it’s something savoury like bacon and egg rolls, a classic smashed avocado on toast, or a sweet treat like my dairy free waffles, breakfast has to be the most delicious meal of the day!
Smash tacos are everywhere on social media and when I was thinking for new and delicious ways to use thin beef sausages (one of the best budget-friendly ingredients), as part of my budget meals series, I knew a breakfast version was going to be a delicious idea.
These easy breakfast tacos combine the classic combination of sausage, perfectly scrambled eggs and smashed avocado (I couldn’t resist!) and is finished off with a drizzle of chilli sauce and chopped chives.

These sausage and egg tacos use just a handful of simple ingredients to create a delicious breakfast that is a step up from toast and eggs.
Note all ingredients and their quantities are laid out in the recipe card at the bottom of this post.
- Sausages – to keep this a budget-friendly meal, I am using thin beef sausages purchased in bulk, but you can honestly use any sausages you like. I want to try this with chorizo sausages next!
- Eggs – soft scrambled.
- Flour tortillas – use the street style, smaller tacos for this recipe. You can also use corn tortillas as well if you want to keep this recipe gluten free.
- Avocado – you can keep it simple add just add sliced avocado to the tacos, but I like to quickly smash it with some garlic powder, lemon juice and salt first.
- Sauce – not pictured but you really need to finish these tacos off with some sauce and I highly recommend chilli sauce such as sriracha, Cholula or you can simply use classic tomato sauce.
Make them your own: add any additional toppings to your tacos that you like such as dairy free cheese, salsa, red capsicum, chopped tomato or pico de gallo.
Step-By-Step Instructions
This recipe has three components, the smashed sausage taco, the quick and easy smashed avocado and the soft scrambled eggs. This is therefore a great recipe to make with family or friends as you can each have a station to be responsible for.
The recipe as written serves 2 people with 2 tacos each, however it’s easily scalable up or down depending on how many tacos you want to make.
Start by preparing the smashed avocado as this can sit a little longer than the other two components. Add the avocado to a bowl and mash with a fork, adding in garlic powder, lemon juice and salt to taste.
To make the smash tacos, cut the sausages in half and remove the casing. Using your hands, press each half of the sausage onto one of the tacos until the meat forms a thin, even layer. Repeat with the remaining sausage halves and tacos.
Heat a frying pan over medium-high heat and lightly spray with cooking oil. Cook the tacos, meat side down, for 3-4 minutes until browned and cooked through. Flip the taco and cook for another 30-60 seconds. Repeat until all the tacos are cooked.
In another small bowl, whisk together the eggs until combined and frothy on top. If you’re using the same pan you cooked the sausage in, first wipe it out with a paper towel and then add a little more clean cooking oil.
Make sure the heat is down very low and pour in the egg mixture. Gently stir with a rubber spatula until just set.
Assemble the tacos by placing some smashed avocado over the sausage, followed by some of the scrambled egg. Top with your choice of sauce and some fresh chopped chives if you have them.

There are a few things to look out for when grocery shopping that are going to help you keep costs down. Here are a few considerations when making this recipe.
- Avocados can get expensive so make sure you’re buying them when in season and abundant.
- Supermarkets sell bulk packets of thin beef sausages which work well for this recipe and are very inexpensive. They also freeze well making so you can use them in a range of different recipes.

For the smashed avocado:
- 1 avocado
- ¼ teaspoon garlic powder
- A squeeze of lemon juice
- Salt and pepper to taste

- 4 eggs
- Sriracha or any sauce of your choice to serve
- Finely chopped chives to garnish
Instructions

- In a small bowl, beat the eggs until frothy and well combined. Wipe out the frying pan with kitchen paper, turn the heat to low, and add a little more cooking oil. Pour in the egg mixture and gently stir with a rubber spatula until just set.
- Assemble the tacos: Spread some of the avocado mixture over the sausage, followed by some scrambled egg. Top with Sriracha and a sprinkle of fresh chives. Serve immediately.
